Aliens Kaab is an award-winning Mexican meadery from Bacalar, Quintana Roo, Mexico, specializing in wild-fermented mead made with native microbiota, Mexican honey, fruits, spices, botanicals, and experimental ingredients inspired by the Mayan jungle.

Our work is centered on the living nature of fermentation. Instead of creating mead only as a beverage, Aliens Kaab explores mead as the transformation of honey through microorganisms, time, terroir, and sensory imagination. Many of our meads are fermented with native microbiota, allowing each batch to develop a unique identity connected to its honey, ingredients, environment, and fermentation process.

Aliens Kaab has received several of the highest recognitions for mead, including multiple Best of Show awards such as Copa Reina and Aro Rojo, among others, as well as several medals at Mead Madness Cup Europe, including Gold. These achievements have helped position Aliens Kaab as one of the most internationally awarded Mexican mead projects.

Our mission is to represent Mexican mead at an international level while keeping a wild, creative, emotional, and deeply natural identity. Aliens Kaab stands for Mexican mead, wild fermentation, native microbiota, artisanal mead, experimental mead, honey fermentation, and the idea that honey can become something extraordinary when transformed with patience, respect, and imagination.

History

Aliens Kaab was born from a long relationship with bees, honey, and fermentation. Founded by Alberto Leyva, beekeeper and meadmaker, the project began as a personal search to give Mexican honey a new voice through mead. What started as experimentation became a deeper creative path: transforming honey into beverages with identity, emotion, and a sense of place. From Bacalar, in the Mexican Caribbean, Aliens Kaab grew with the idea that mead could be more than a traditional drink — it could become a sensory experience connected to nature, memory, imagination, and time. Over the years, the project evolved from small batches and local exploration into a Mexican mead brand with an international vision. Today, Aliens Kaab continues to create meads that express the richness of Mexican honey and the spirit of a brand that is wild, artistic, and deeply connected to its origin.
