Heather is the finest of the moorland flowers and the most sought after English honey. It goes without saying that Heather produces the best most complex and flavoursome mead, and it stands to reason that Heather Sparkling Mead is the king or queen of our meads.
Each bottle takes around 2-3 years to make, with a year in primary and a year in secondary fermentation. Giving an ageing process that really enhances all of the tertiary aromas and flavours of the Heather.

The moorlands are very much like vineyards, each moor producing a different quality of Heather Honey, and we consistently take the bees in July and August to the same moors each year to make the best Heather honey for the Heather Sparkling Mead.
Tasting Notes:
Right from opening the bottle, the air is filled with a lovely aroma of Heather. Rich, and full of the aromas of the beehive, honey, beeswax, propolis all the flavours are present. A nice refreshing dry start, with lasting honey on the palate.

Heather Sparkling Mead pairs well with cheese courses, game dishes, and dishes with strong flavours, a favourite with sommeliers and top chefs, giving the depth of flavours and potential exciting new pairings that can be made.
