Jiří Smolík's meads are quite exceptional compared to the production of other producers. Mr. Smolík focuses on high-alcohol meads and melomels. In the case of fruit meads, the honey is not diluted with water, but supplemented only with pure fruit juice. Using the method of controlled fermentation at low temperatures, he is then able to produce mead with an alcohol content well over 15%. Even so, they are still quite sweet, thanks to the large amount of sugars in the original solution. The amount of alcohol thus corresponds to Polish high-percentage meads, but the alcohol is exclusively of fermented origin from honey. It does not sulphurise, infuse or sweeten meads.
