NorseMet the “wild” one Mead has been around for over 9000 years, and NorseMet is a homage to those who came before. An extremely authentic mead (although without the spit), this golden nectar was spontaneously fermented by wild yeast. There is a stark contrast in the intricacies of flavours created through this process, compared to modern yeast-induced meads. A bouquet of toasted oak and resin, the “wild” one is untamed, and should be paired with similarly untamed flavours such as game or wild berries. Wildflower honey (Lindentree, Sunflower and Dandelion) and pre-fermented honey, 14% abv. Fermentation: 6 Months Maturing in steel-tank: 6 Months
